Rosemary Roasted Red Potatoes

Ingredients:

3 pounds small red potatoes
1/4 cup olive oil
2 tablespoons fresh chopped Rosemary or 1 tbsp dried Rosemary
salt and pepper to taste

Directions:

Heat oven to 375 degrees F. Spray shallow baking pan with cooking spray. Wash and dry potatoes. Halve the smaller ones and quarter the larger ones. In a large bowl, toss the potatoes with the olive oil and Rosemary till coated well. Put in a single layer in the pan. Roast for about 45 minutes, stirring and turning them over 2 -3 times during cooking until tender and lightly browned. Serves 8.

Green Beans Almondine

Ingredients:

3 pounds fresh green beans, with ends trimmed
1 stick butter
3 cloves garlic, minced
1/2 cup slivered almonds
2 tablespoons white vinegar
salt and pepper to taste

Directions:

Cook the green beans in a large pot of boiling water for about 5-7 minutes. They should be a bright green color. Drain well and place in a serving bowl.

Melt the butter and sautee the garlic and almonds till lightly browned. Add butter mixture to beans. Then add vinegar to brighten the flavors, along with salt and pepper to taste. Toss well. Serves 8.

Christmas dinner menus Carrots with Orange Maple Glaze

Ingredients:

2 pounds of baby carrots
3 tablespoons Maple syrup
2 tablespoons corn starch
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 cup orange juice
1/2 stick of butter

Directions:

Cook carrots in boiling water for about 20 minutes until tender. Drain well.

Combine maple syrup, corn starch, salt, and ginger in a small saucepan. Add the orange juice and cook until thickened and bubbly. Stir constantly and boil for 1 minute. Now add the butter and melt completely. Pour this mixture over the carrots and toss well. Garnish with some fresh chopped parsley if you like.

This is my husband's grandmother's recipe for Sausage Stuffing. A family favorite on the Christmas dinner menu for generations.

Mom-Mom's Sausage Stuffing

Ingredients:

1 pound of sausage (out of its casing, crumbled)
1 cup celery, chopped
1/2 cup onion, chopped
8 ounces mushrooms, sliced
1 teaspoon thyme
1 10 oz. package herb-seasoned stuffing cubes
2 eggs
2 loaves of 1-3 day old bread, cubed

Directions:

Saute the sausage in a large pan until browned. Add celery and onion to sausage and continue sauting until vegetables are soft (5-7 minutes). Add mushrooms and thyme and cook for 2-3 minutes longer. Set aside to cool.

Prepare herb-seasoned stuffing as directed on package.

In a large bowl, beat eggs until froth forms. Soak the bread cubes in water for 2 minutes. Squeeze out the water and add to bowl with eggs. Add the stuffing mix and the sausage mixture. Combine and blend all ingredients.

Bake at 350 degrees F in a greased baking dish for 30 minutes. Let set for 10 minutes before serving. Serves around 8-12.


This is the best cranberry relish recipe! Goes great with the Turkey.

Cranberry Relish

Ingredients:

1 package of fresh or frozen cranberries

1 large apple, peeled and cut into wedges (We like to use Granny Smith)

1/2 cup sugar

1/3 cup apple juice (unsweetened)

1 tablespoon lemon zest

Directions:

In a food processor, process the cranberries and apples until coarsely chopped.

Transfer to a serving bowl. Stir in sugar, apple juice and lemon zest. Refrigerate until ready to serve.


What a great idea to include those winter butternut and acorn squashes in our Christmas dinner menu! This is a delicious Christmas recipe for a Winter Squash Bake.

Winter Squash Bake

Ingredients:

1 medium butternut squash

1 medium acorn squash

1 1/2 cups of maple syrup

1/2 cup raisins

1/2 stick butter, melted

1 teaspoon nutmeg

1 teaspoon allspice

Directions:

Cut squashed in half lengthwise. Scoop out seeds. In a shallow microwave safe dish, place the squash halves skin side down and add only about 1/2 inch water. Microwave on high for 15 minutes. Skin will be soft, but squash meat will be just tender. Put aside to cool.

In a small bowl, combine the maple syrup, raisins, butter, nutmeg, and allspice.

Remove squash rind and cut into 1 inch cubes. Place in a shallow baking dish sprayed lightly with cooking spray. Drizzle with the syrup butter mixiture. Cover with foil and bake at 350 degrees F for 20 minutes. Uncover and bake another 10-15 minutes until the squash is tender. Serves at least 8.

You can make a green salad to go with any meal. But this one is special and fits nicely with a Christmas dinner menu! Try it!

Mixed Green Salad with Apple Vinaigrette

Ingredients:

3 bags of mixed salad greens (romaine, curly endive, and radicchio)

3 Red Delicious apples, cored and diced (you can use Granny Smith apples if you like a litte tartness)

1 1/2 cup of crumbled blue cheese

2/3 cups of chopped pecans or walnuts

Apple Vinaigrette Ingredients:

1/2 cup unsweetened apple sauce

1/3 cup extra virgin olive oil

1/4 cup apple cider vinegar

1 tablespoon Dijon mustard

1/2 teaspoon Kosher salt

Directions:

Combine all ingredients in a small bowl. Whisk until combined well. Pour into a jar and refrigerate. When ready to serve salad, toss with the Vinaigrette and serve immediately.
